Smoothie Recipe: Summer Fruit

For Seattle summer is quickly coming to a close. Earlier this week it started to cool down and the trees already started turning.

Fall is on its way!
To be honest, I love fall. The colors, scarves, coffee, and comfy clothes!
But I always miss the fresh fruit of summer. Along with the joys of a relaxed summer evening, beer in hand.

This time of year is also always full of so many changes. Or maybe that’s just me… I think its the start of a new school year in the air. It seems to awaken and inspire new goals and changes for the coming year.
For me this next week is a whole new chapter. A new job. A new house. Whole new set of responsibilities, but all with good intentions.
To celebrate all these changes and the close of a beautiful couple of weeks, I mixed up one of Joy the Baker’s smoothies into this Summer Fruit Smoothie. It makes enough for two so keep one in the fridge for the next morning or share!
Summer Fruit Smoothie
inspired by Joy the Baker
Preparation time: 15-20 minutes
Makes: 2 8oz drinks
Tools:
- Measuring cups and spoons
- Sharp knife
- Cutting board
- Spoon
- Blender
- 2 8oz glasses
Ingredients:
- 1 1/2 cups frozen strawberries
- 2/3 cup cucumbers
- 1/2 cup peach
- 1/2 cup almond milk
- 2 tablespoons honey
Directions:
- Slice the cucumber in half and scoop out the seeds, then dice. Peal and dice the peach too. Add the cucumber, peach, and strawberries to the blender.
- Pour in the almond milk and honey. Pulse until well blended. Pour between two glasses and garnish with cucumbers!
- Enjoy!
